Cheesy Rice and Corn Casserole

What you need:

+ 2 c. Minute® White Rice, uncooked
+ 2 c. chicken broth, canned
+ 1 container (8 oz.) chive-and-onion cream cheese spread
+ 1 can (15 1/4 oz.) corn with red and green bell peppers, drained
+ 1 c. shredded Mexican-style four-cheese blend, divided
+ 2 Tbsp. chopped fresh cilantro
What to do:
1. Preheat oven to 375°F. Prepare rice according to pkg. direction using broth for water.
2. Mix rice, cream cheese spread, corn, 3/4 c. shredded cheese and cilantro. Pour mixture into greased 1-1/2 qt. baking dish. Sprinkle with remaining 1/4 c. shredded cheese.
3. Bake 15 to 20 min. or until cheese on top is melted and lightly brown.
*Cooking suggestion - for more Mexican flavor, add 1 to 2 tsp. ground cumin.
