California Plum and Quinoa Salad

Prep Time: 20 Min. Cook Time: 15 Min. Chill Time: 90 Min. What you need:

+ 1 1/4 c. quinoa
+ 2 1/2 c. water + 2 fresh California plums, pitted and diced + 1/2 c. chopped, toasted walnuts + 1/4 c. ea. chopped red and yellow bell pepper + 1/4 c. sliced green onions + 3 Tbsp. flax oil + 3 Tbsp. extra virgin olive oil + 1/4 c. white wine vinegar + 1 1/2 Tbsp. honey + 1/4 tsp. salt What to do:
1. Rinse quinoa and drain well. Add to boiling water; reduce heat and simmer, covered, for 12 mins.
2. Remove from heat and let stand for 5 mins. Fluff with a fork and let chill for about 30 mins. 3. Stir together quinoa, plums, walnuts, peppers and onions in a medium bowl. Whisk together remaining ingredients in a small bowl and pour over salad; toss well to coat all ingredients with dressing. 4. Cover and chill for 1 hr. Nutritional information:
